Cherry’s granola

The best granola recipe ever! This was adapted from my university roommate’s mom Cherry’s recipe and is my go-to all year round.

Cherry’s Granola

Servings 12 cups

Ingredients
  

  • 6 c large flake oats
  • 1 c wheat germ (optional)
  • 2 c sunflower seeds unsalted
  • 2 c pumpkin seeds unsalted
  • 1 c coconut unsweetened (shredded or flaked)
  • 1 c flax seed
  • 2 c pecans, chopped
  • 1 c almonds, unsalted and chopped
  • 1/2 c coconut oil
  • 1/2 c maple syrup or honey
  • 2 tbsp cinnamon
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 1 c dried fruit (raisins, cranberries, or blueberries)

Instructions
 

  • Mix together first 8 ingredients in a large bowl.

  • Heat together coconut oil, maple syrup (or honey) and cinnamon, and then add vanilla and salt. Pour over the mixture in the bowl and toss to coat lightly.

  • Spread mixture onto a large shallow pan or cookie sheet lined with parchment (or a silicon baking mat).

  • Bake at 300 F for about 25 minutes, stirring often to toast evenly and lightly. Remove from oven, cool and then add dried fruit (or anything else you like – banana chips, M&Ms, chocolate chips). Store in tightly covered containers. Makes about 12 cups.
