Pulled Pork Sliders

A great go-to recipe for a crowd! I often double the recipe so that I have enough to stretch through the week. Not only can you use the meat again for leftovers, but you also add the meat to some yummy nachos, or create a pulled pork poutine. For the sliders, be sure to choose some crusty buns that won’t fall apart once you pile on the pork! Of course you can eat as is, but what’s even better is adding in some coleslaw for a nice crunch!

Ingredients
  

  • 1 tsp olive oil
  • 1 c barbecue sauce
  • 2 tbsp apple cider vinegar
  • 2/3 c water
  • 2 tbsp brown sugar
  • 1 tbsp yellow mustard
  • 1/2 c ketchup
  • 2 tbsp worchestershire sauce
  • 1 tsp chili powder
  • 1 c chopped onion
  • 1 clove garlic minced
  • 2.2 lbs boneless pork shoulder, roast, or tenderloin I try to use a shoulder where possible. I have used a tenderloin but it is quite lean and with that you lose some flavour without a lot of fat.

Instructions
 

  • In a slow cooker, add all ingredients and mix well.

  • Add meat, then cook for 7-8 hours on low.

  • Once done, take meat out of the slow cooker into a bowl and with two forks, begin to pull the meat apart and shred it. As you do, remove any excess fatty bits (some people don’t bother, but if you know me, I am not a fan of jiggly fat!). Once you have broken up all of the meat, return it to the slow cooker in the sauce, and voila, you are ready to serve it up!
