Mix together first 8 ingredients in a large bowl.
Heat together coconut oil, maple syrup (or honey) and cinnamon, and then add vanilla and salt. Pour over the mixture in the bowl and toss to coat lightly.
Spread mixture onto a large shallow pan or cookie sheet lined with parchment (or a silicon baking mat).
Bake at 300 F for about 25 minutes, stirring often to toast evenly and lightly. Remove from oven, cool and then add dried fruit (or anything else you like - banana chips, M&Ms, chocolate chips). Store in tightly covered containers. Makes about 12 cups.
